Dr. Juha-Pekka Pitkänen is the CTO and co-founder of Solar Foods, a company that makes "food out of thin air". The man who considers himself “more of an academic plumber than a scientist”, he is the mind behind a revolutionary bioprocess that makes a microorganism-based protein called Solein using air and electricity as its feed. Taking research from the lab to the market has been a feature of JP's career. We discussed about launching a novel food, the future of food tech and JP's story.
